Meet the duo behind the famous Socker Sucker pastry shop!
Frida Bäcke, one of Sweden’s best pastry chefs, has been awarded the Pastry Chef of the Year award several times and Bedros Kabranian, one of Sweden’s best bakers, has competed extensively with the Swedish National Baking Team, among others.
Frida & Bedros run the famous pastry shop Socker Sucker in Stockholm and are currently releasing their new book Classic pastries on a new level, a luxurious recipe book that takes traditional coffee to new heights!

Do you notice any difference in target groups interested in baked goods now compared to 10 years ago?
Yes, absolutely. We see that the 16-25 target group has changed significantly. Previously, this group was quite uninterested in baking, but today they are very aware, curious and trend-driven. They go from having baked simple classics like muffins and sponge cake as children – often together with mom or grandma – to now wanting to explore new techniques, flavors and expressions.
What trends in baked goods do you see on the horizon for 2026?
It’s always fun when you go a little “back to basics” – where the classics take their place again. There are so many fine crafts and traditional baked goods in Sweden that are sometimes forgotten in the search for the new. It would be fun if more people opened their eyes to the really well-made classics.
And if we can make a personal wish: for the fruit trend to rest for a while!
What is your personal favorite thing to bake – if you could only choose ONE classic pastry each?
Bedros: Sponge cake
Frida: Creme brûlée
What can the audience expect from your time on stage at Sthlm Food & Wine?
The audience will get an insight into how we build our pastries – how we think during the process, what choices we make and why. We want to show that every detail has a purpose.
